Maria do Carmo’s
Carrot Cake

I meWoman, mother, worker, hard worker! She
was born in the country side of Minas Gerais, came alone to work
in Belo Horizonte at 14 years old. She has a beautiful daughter,
Lílian, and she lives with Zé (house caretaker at
the condominium of Lagoa Santa). Life since the beginning has
not been easy for them, but they have hope and a daily smile with
lots of optimism and love for life.
Maria do Carmo always impressed me, she was taking care of everything,
her home, her daughter and also she was working out of home. Fighter
and always searching for better future for her daughter in a country
were the difference between classes is an obstacle for the low
class people.
Maria do Carmo and I spent a lot of time together from October
2004 to February 2005, in Lagoa Santa, Brazil. She was very helpful
and alert, helping me and showing me her delicious recipes. In
return I taught her how to ride a bike and Lílian to swim
:-)
The picture attached is from the big day, when Lílian finished
her alphabetization studies! Well done!
I share with you all, this typical Brazilian recipe.
1 soup spoon of baking powder
5 medium size grated carrots
1 cup of whole wheat flower
1 cup of white flower
¼ cup of canola oil
½ cup of brown sugar
½ cup of milk
A pinch of salt
3 eggs
Mix all together and bake it in an oil and flower sprayed tray
