Jake’s Banana Bread

I met Jake in Calgary (Canada). I stayed at his place to participate at one round of the World Cup in 2004. He was very kind with me and served me this bread at breakfast, Friday before my race. Jake love’s to cook and even wrote a very original book with a collection of recipes from his colleges at work. I loved the cake and right away we found a common passion. Jake is a very special person, with a lot of ideas, and, on this day, he was working on his new project, transforming his bike in a Tandem for his son Liam (photo). He cut and welded a small bike in such a way that it can hook to the back of his mtb bike. My first impression was not so good but on Sunday it was ready, and he went to watch my race with his new high tech tandem bike, and Liam simply loved it. We had a very nice weekend and these times will be always remembered at each bite of this bread.

Jake’s Banana Bread
2 ripe bananas
2 eggs
3/4 cup of brown sugar
1¼ cup of flower
1 tea spoon of cinnamon
1 tea spoon of baking soda
¼ cup of chopped walnuts
¼ cup of raisins

Mix bananas and eggs together and it .
Blend into dry ingredients with a wooden spoon
Put in an oil sprayed tray
Bake in the oven for 1 hour at 350F
