Elina’s Muffin
Elina
Sophocleous is a mountain bike racer I met in 2003 when I
went to a D2 International mountain bike race in her country –
Cyprus. Elina and I were fighting for a spot in the 2004 Olympics
and we traveled together to some races in Europe. Elina knows
very well how to cook healthy food while I was a rookie in the
kitchen at the time. So I was proud of my role as assistant chef:
washing, peeling and cutting J. She prepared these Muffins to
eat them while traveling to races. It is an easy recipe and very
healthy as well, good for traveling, breakfast and snacks. Elina
and I met during a very important stage of our life and we had
a lot of fun together. We both reached our dream to participate
in the 2004 Olympics !!
Elina’s Muffin
Group 1
1 chopped large apple
1 chopped large banana
1 handful of raisins
1 tablespoon of brown sugar
1½ teaspoon of cinnamon
1½ teaspoon of baking powder
1 egg white
150ml of skimmed milk
50g of Kellogg's All Bran (or your favorite cereal)
250g of plain flour
First mix Group 1 all together;
Mix the milk with the cereal so they get soft;
Mix all the ingredients together (the pastry has to be soft like
cake mixture but stickier);
Preheat oven at 200ºC (400ºF) & preheat the muffin
tray forms as well;
Bake for about 25 min until the Muffins are a little brown.
